Experts prove the harm of white meat

University of California: white meat (chicken, turkey) raises cholesterol just as much as red meat — both types elevate low-density lipoprotein levels.

Chicken and other white meat can be just as harmful as red meat (pork, beef, lamb). Until recently, it was believed that only red meat, which contains a lot of saturated fat, raised cholesterol levels (low-density lipoproteins) and led to early death.

Red meat was even added by the International Agency for Research on Cancer to the group of potential carcinogens. Now the University of California has shown that white meat is also a concern — it likewise raises cholesterol levels. An experiment was conducted involving 113 people aged 21 to 65.

Volunteers were randomly divided into two groups. The first ate foods high in saturated fat, while the second ate foods low in saturated fat. Participants consumed red meat (mostly beef and pork), white meat (mainly chicken and turkey), and also practiced abstaining from meat.

It turned out that active consumption of saturated fat increased the concentration of large low-density lipoprotein particles. These particles are needed to transport fats, including cholesterol. There are also smaller particles, often associated with carrying nutrients. Both types of meat raised the level of large particles.
